Pecan Crusted Chicken Tenders & Salad with Warm Maple Dressing
INGREDIENTS
Vegetable oil for frying 1 pound chicken strips 1 cup all-purpose flour, seasoned 2 eggs, beaten with ½ cup milk (or water) 1 cup Panco bread crumbs 1 cup pecans finely chopped
DRESSING PREPARATION
¼ cup maple syrup ¼ cup Kraft barbecue sauce 1 navel orange, juiced ¼ cup extra-virgin olive oil Salt and freshly ground black pepper 1 bag spring mix greens
PROCEDURE
Heat 1½ to 2 inches of vegetable oil over medium heat. Season chicken tenders with salt. In 3 shallow dishes, place flour in one dish, eggs beaten with milk or water in a second dish. In the third dish combine breadcrumbs with ground pecans, nutmeg and orange zest. Coat tenders in the dish then add an egg into the breadcrumb mixture. Fry tenders in small batches for 6 to 7 minutes. Drain with towel.
Combine maple syrup, barbecue sauce and orange juice in a bowl. Whisk in olive oil and seasoned pepper.
Top salad with pecan crusted chicken and drizzle remaining dressing over top.
